We all need a light, refreshing, sparkling beverage for the upcoming warmer months and I’m here to let you know that I got you covered. We’ve been throwing matcha in with milk for so many years and it’s time to think outside the latte. Matcha is the perfect midday pick me up, add sparkling water and limeade and you have an awesome spring/summer refreshment. It’s tastier and better for you than other sodas too so that’s always a plus.

Ingredients
Matcha- 1tsp (2g)
still water- 3Tbsp (50g)
Lime juice- 1oz (24g)
Simple syrup- 1oz (25g)
Sparkling water- 4oz (118g)
procedure
- Bring still water to a light simmer.
- Add 1 Tbsp of simmered water to matcha and slowly mix, once fully combined add the other 2 Tbsp’s of water and whisk together
- Add the lime juice and simple syrup to the matcha mixture and whisk again then pour into the bottom of a glass
- slowly pour the sparkling water atop the matcha mixture.
- Add ice, Gently stir to combine, and enjoy.
Matcha
There are a few different match types on the market and it can get a bit overly complicated. The main two you’ll see are ceremonial grade matcha and culinary grade matcha. The ceremonial matcha is better for drinking on its own as the flavor is more nuance while culinary matcha is bolder. When harvesting green tea for matcha the young top leaves from the first harvest will be used for ceremonial grade while the older leaves from the second harvest will be used for culinary matcha. Most people say to only use culinary grade matcha for drinks but I’m a rule breaker. Every Once in a while I’ll bust out the fancy ceremonial stuff for a beverage, but most of the time I have culinary on hand. At the end of the day don’t fret about your matcha, it’s all just ground up green tea.
Sparkles
When It comes to your sparkling water the more carbonation the better. Since we’re adding other liquids to the drink we’re going to lose some of the effervescence. If we can’t get all the fizz then what’s the point of making it a sparkling soda. Some sparkling and soda waters will have more effervescence than others but use whatever you can get your hands on. A big key is going to be how you mix in the sparkling water. Have the matcha and limeade already in your glass and tilt it a bit. Slowly pour your water into the side of the glass. If we put the sparkling water straight in the liquid it will fizz like crazy and we’ll lose a lot of carbonation. Also, void pouring the matcha and limeade on top too unless you want a green volcano eruption. For some reason I always do this trying to get the insta layers. Learn from my mistakes.
