Super easy cabbage salad with quinoa, and wakame. This salad comes together in about 20 minutes. Most of that time is just the quinoa cooking and the wakame hydrating. Give this recipe a try next time you want an easy salad or side. Make it your own by adding whatever herbs you have in the fridge. Cabbage, Wakame, Quinoa Salad

Ingredients
- 4C (300g) Cabbage, sliced
- 2 tbsp (5g) Dry wakame
- 1/2C (100g) Dry Quinoa
- 1/4C (30g) White onion, thinly sliced
- 1 Tbsp (17g) Lemon
- 4 tsp (20g) Rice Vinegar
- 1/4C (83g) Yogurt
- 2 tbsp & 2 tsp (40g) Kewpie mayo
- 4 tsp (15g) Soy sauce
- to taste Salt
Instructions
- Add quinoa to a pot with 1 cup of water. Season with a splash of soy sauce or salt. Bring to a boil, then immediately reduce to a low simmer. Cover with a lid and cook 15 for to 20 minutes.
- Add the wakame to a bowl and hydrate with 1 cup of water. Wait 10 to 15 minutes and the wakmame should be more than double the size.
- Mix all of your liquid ingredients into a dressing. In a large bowl add the cabbage, onion, wakame, and quinoa. Season with salt to taste. Fold everything together until evenly mixed.
- Optional- Add any fresh herbs to the mix: mint, cilantro, parsley, thyme, rosemary, sage, etc.
