Cabbage, Wakame, Quinoa Salad

Hearty cabbage salad with quinoa, and wakame. Its bright,

Ingredients

  • 4C (300g) Cabbage, sliced
  • 2 tbsp (5g) Dry wakame
  • 1/2C (100g) Dry Quinoa
  • 1/4C (30g) White onion, thinly sliced
  • 1 Tbsp (17g) Lemon
  • 4 tsp (20g) Rice Vinegar
  • 1/4C (83g) Yogurt
  • 2 tbsp & 2 tsp (40g) Kewpie mayo
  • 4 tsp (15g) Soy sauce
  • to taste Salt

Instructions

  • Add quinoa to a pot with 1 cup of water. Season with a splash of soy sauce or salt. Bring to a boil, then immediately reduce to a low simmer. Cover with a lid and cook 15 for to 20 minutes.
  • Add the wakame to a bowl and hydrate with 1 cup of water. Wait 10 to 15 minutes and the wakmame should be more than double the size.
  • Mix all of your liquid ingredients into a dressing. In a large bowl add the cabbage, onion, wakame, and quinoa. Season with salt to taste. Fold everything together until evenly mixed.
  • Optional- Add any fresh herbs to the mix: mint, cilantro, parsley, thyme, rosemary, sage, etc.
