Ingredients
4C(300g)Cabbage, sliced
2 tbsp (5g)Dry wakame
1/2C(100g)Dry Quinoa
1/4C(30g)White onion, thinly sliced
1 Tbsp(17g)Lemon
4 tsp(20g)Rice Vinegar
1/4C(83g)Yogurt
2 tbsp & 2 tsp (40g)Kewpie mayo
4 tsp (15g)Soy sauce
to taste Salt
Instructions
Add quinoa to a pot with 1 cup of water. Season with a splash of soy sauce or salt. Bring to a boil, then immediately reduce to a low simmer. Cover with a lid and cook 15 for to 20 minutes.
Add the wakame to a bowl and hydrate with 1 cup of water. Wait 10 to 15 minutes and the wakmame should be more than double the size.
Mix all of your liquid ingredients into a dressing. In a large bowl add the cabbage, onion, wakame, and quinoa. Season with salt to taste. Fold everything together until evenly mixed.
Optional- Add any fresh herbs to the mix: mint, cilantro, parsley, thyme, rosemary, sage, etc.
