With a sharp knife slice the lemons into thin wheels. Discard the two ends.
In a wide bowl toss the lemons with sugar and salt until evenly coated.
Transfer to a glass or plastic container. the lemons to release some of the juice.
muddle two to three times in the day if possible. Cover with a lid and let sit at room temperature for a day until the sugar has dissolved.
